Pancake Batter Cinnamon Apple Monkey Bread

It's been way too long! I need to get better at posting again! I hate to admit it, but since my last post I have given up on making everything from scratch (about 2 wks)! It became so expensive and time consuming...boo. I started couponing again too! For some reason this brings me some sick joy, I like to shop and playing a little savings game in my head feels better! ;)

I'm about half done with my Christmas shopping! I'm also half way done with Insanity, but I seem to have pinched a nerve in my back, again =( I hope it gets better before Saturday. I'm running in the Color Vibe 5k, but at this rate I may be hobbling. What else have we done??? Hmm... I started preschool home-school. Mr.M seems to enjoy it, Mr.R likes listening in and jumping in the jumperoo that he's technically is too heavy for (25lb 7m2d old=beast). Two Mama Owls has been going well! We're starting to pick up again. I only work at night when they're sleeping, so I have learned to pick up the pace for sure. Check out our Fall stuff @ Two Mama Owls!

For the exciting part of this post, FOOD!

Today I made something delicious and 2yr old helper friendly! I made this because I needed something and seriously did not feel like going to the store!

Pancake Batter Monkey Bread!



You'll need

  • 1 box pancake batter
  • Approx. 1 1/2c milk
  • 1c sugar
  • 1tsp cinnamon
  • 4 small apples
  • 6tbs melted butter



  1. Pour the batter in a large bowl and slowly add milk while mixing. When it is all blended and before it's sticky stop with the milk. On a floured surface roll out the "dough-like-batter" until it's about 1/2in thick. Using a circular cookie cutter or cup cut as many circles as you can and then cut them in half.
  2. Core and dice the apples. In a small bowl combine the sugar and cinnamon. Place half the apples in a bowl and coat them with 1/4 of the sugar mixture. Place them at the bottom of a well greased/sprayed bundt pan. Place half pancake half circles in a bowl, coat with 1/4 mixture and then put them on top of apples....do the rest of the apples and then the rest of the pancake.
  3. Pour the melted butter over the top. Bake it on 375 for about 40 min
  4. Enjoy!
